  • Strawberries: Use fresh and firm strawberries that are at room temperature. Avoid using strawberries that are soft since the juices will leak through the chocolate coating.
  • Milk chocolate: I use milk chocolate chips, but a bar of milk chocolate or baking chocolate will work perfectly.
  • White chocolate: You can skip white chocolate chips if you don’t want to drizzle it over the hardened chocolate coating. But if you choose to use it, find good quality white chocolate chips or a white chocolate bar.
  • Coconut oil: Since this recipe calls for chocolate chips, adding a little coconut oil helps thin out the chocolate and also creates a shiny chocolate coating. Alternatively, you can substitute the coconut oil for canola oil.
  • Shredded coconut: I prefer using unsweetened shredded coconut to help balance out the flavours and not have an overly sweet strawberry.
  • Chopped pistachio: A combination of salty and sweet flavors is truly unbeatable. However, if you add chopped roasted pistachios to the mix, you not only get the amazing taste combination but also a delightful extra crunch.

Topping Ideas

  • Chopped nuts: roasted pistachios, peanuts, almonds or pecans.
  • Sprinkles: nonpareils, rainbow sprinkles, chocolate sprinkles or holiday-themed sprinkles.
  • Additional toppings: shredded coconut, Oreos, mini chocolate chips, edible rose petals, cookie crumbs or crushed candy canes.
  • Drizzle: melted peanut butter or Lotus Biscoff would be AMAZING!

Tips and Tricks

  1. Avoid using strawberries that are directly from the fridge to prevent condensation. Instead, leave the strawberries out for about 30 to 40 minutes before use.
  2. NEVER dip wet strawberries into chocolate. Always pat strawberries dry and place them on layers of paper towel to air dry for at least an hour. Any excess liquid will prevent the chocolate from coating the strawberry.
  3. Remove the excess chocolate by shaking the strawberry. If you choose to drag the bottom half of the strawberry along the edge of the bowl, be careful not to completely remove the chocolate or else the juices will leak out.
  4. Pour the melted chocolate into a wide and long cup such as a shot glass.
  5. Heat the chocolate in intervals of 25 to 30 seconds and stir each time with a spatula. Overheating will cause the chocolate to seize.
  6. If you choose to add a drizzle, refrigerate your chocolate strawberry for 20 minutes and then pour on your drizzle. My favourite method is to pour the chocolate into a zip-lock bag and cut a VERY tiny hole in the bottom corner of the zip-lock bag.
  7. To avoid sweaty chocolate strawberries simply place them in the refrigerator to cool. Do NOT place them in the freezer to prevent the strawberry from thawing.

Ingredients

  • 330 grams strawberries (approximately 12 medium strawberries)
  • 8 ounces milk chocolate chips
  • 3.5 ounces white chocolate chips
  • 1 teaspoon coconut oil
  • 1/4 teaspoon coconut oil
  • 1/2 cup chopped pistchios
  • 1/2 cup unsweetened shredded coconut

Instructions

  • Wash the strawberries with lukewarm water. Dry the strawberries with a towel and place them onto layers of paper towel for an hour. Line a baking tray with parchment paper.
330 grams strawberries (approximately 12 medium strawberries)
  • (optional) Poke toothpicks into the tops of each strawberry.
  • Place your toppings into small bowls or plates and set aside.
1/2 cup chopped pistchios, 1/2 cup unsweetened shredded coconut
  • Add chocolate chips and coconut oil to a microwave-safe bowl. Melt the chocolate chips for 30 seconds and then use a rubber spatula to stir the chocolate. Repeat the process until fully melted.
8 ounces milk chocolate chips, 1 teaspoon coconut oil
  • Hold the strawberry by the toothpicks and leafy stems. Dip the strawberry into the chocolate and gently shake off any excess chocolate. Place the chocolate strawberry into the bowl that has the toppings and roll it around until fully covered. Place the strawberry onto parchment and repeat the process until all the strawberries are coated. Refrigerate for 20 minutes.
  • Microwave the white chocolate and coconut oil for 30 seconds and stir. Repeat the process until melted. Allow the white chocolate to cool for 2 to 3 minutes and pour it into a zip lock back. Snip off a VERY tiny corner of the bag. Take the strawberries out of the fridge and drizzle the chocolate by making horizontal lines over the strawberry. Place the strawberries in the fridge for a few minutes so the white chocolate drizzle sets. Enjoy!
3.5 ounces white chocolate chips, 1/4 teaspoon coconut oil

Notes

  • If the chocolate begins to cool down, just pop it in the microwave for 20 seconds.
  • I highly recommend that you enjoy your chocolate strawberries on the day they are prepared, but if you choose to store them, just place the tray of strawberries uncovered in the fridge, and they will be great for up to 3 days.
  • Pour extra chocolate onto parchment paper and let it cool. Break up the chocolate and place it into a sealed bag for future use.
