Ingredients
- Flour – I use all-purpose flour, but you can substitute 1:1 gluten-free flour if needed. If using self-rising flour, simply omit the baking powder.
- Leavening Agent – Baking powder is essential for achieving the perfect chewy texture.
- Salt – Both table salt and kosher salt work well in this recipe.
- Cottage Cheese – I prefer using low-fat (1%) cottage cheese, but any variety will work.
- Everything Bagel Seasoning – If you don’t have store-bought seasoning, combine sesame seeds and poppy seeds for a DIY alternative.
- Eggs – You’ll need one egg for the egg wash and additional eggs for cooking.
- Toppings – Customize your bagel with your favorite ingredients! I enjoy a combination of cucumbers, onions, tomatoes, and jalapeños for added crunch and spice.
- Condiments – My favorite pairing is Kewpie mayo and strawberry jam, but feel free to use any sauce or spread of your choice.


How To Make Cottage Cheese Bagels
Step 1: Preheat the oven to 370°F (188°C) and line a baking tray with parchment paper.
Step 2: Whisk together the flour, baking soda, and salt in a large bowl and set aside.
Step 3: In a food processor or blender, blend the cottage cheese until smooth. This step helps create a smoother dough texture. Add the blended cottage cheese to the dry ingredients and use a spatula to mix everything together. The dough will be slightly sticky at this stage.
Step 4: Transfer the dough to a lightly floured surface. Knead for about 2 to 3 minutes, adding more flour as needed until the dough becomes soft and manageable. Divide the dough into 4 equal portions.

Step 5: To shape the bagels, roll each piece into a log shape, then flatten one end and wrap it around to connect with the opposite end, forming a ring. Gently press to seal the ends together.
Step 6: Place the shaped bagels onto the baking sheet. In a small bowl, beat 1 egg to create an egg wash. Using a pastry brush, lightly coat the tops of the bagels. Sprinkle everything bagel seasoning generously over each bagel. Bake for 15–18 minutes, or until the bagels are golden brown on top. Remove from the oven and let them cool completely on a wire rack before slicing.
Step 7: Heat a nonstick pan over medium-low heat and lightly grease with oil or cooking spray. Crack an egg into the pan and cook it to your liking. Slice a cooled bagel in half using a serrated knife and spread Kewpie mayo on one half of the bagel and strawberry jam on the other. Layer the sandwich with tomatos, cucumbers, onions, and jalapeño slice, then place the cooked egg on top.

How to Shape Bagels (Step By Step With Pictures)
- Form the Dough Log – Roll the dough into a log about 1 inch thick and 6 inches long.
- Create a C-Shape – Slightly bend the log into a C-shape and use your finger to gently flatten one end of the bagel.
- Connect the ends – Place the opposite end of the bagel on top of the flattened side.
- Seal the Bagel – Wrap the flattened end around the opposite end and press to seal, forming a perfect circle.
