Cottage Cheese Bagels
- 1 cup (120 grams) All-purpose flour + extra for kneading
- 2 teaspoons Baking Powder
- 1/4 teaspoon Salt
- 1 cup (250 grams) Cottage cheese, use low fat or full fat

- 5 Large eggs
- 12 slices Tomatoes
- 16 slices Cucumbers
- Half Red onion, thinly sliced
- 1 Medium Jalapeno, thinly sliced
- 4 tablespoons Kewpie Mayo
- 4 tablespoons Strawberry jam
Cottage Cheese Bagels
Preheat the oven to 370°F (188°C) and line a baking tray with parchment paper.
Whisk together the flour, baking soda, and salt in a large bowl and set aside.

In a food processor or blender, blend the cottage cheese until smooth. Add the blended cottage cheese to the dry ingredients and use a spatula to mix everything together. The dough will be slightly sticky at this stage.

Transfer the dough to a lightly floured surface. Knead for about 2 to 3 minutes, adding more flour as needed until the dough becomes soft and manageable. Divide the dough into 4 equal portions.
To shape the bagels, roll each piece into a log shape, then flatten one end and wrap it around to connect with the opposite end, forming a ring. Gently press to seal the ends together.
Place the shaped bagels onto the baking sheet. In a small bowl, beat 1 egg to create an egg wash. Using a pastry brush, lightly coat the tops of the bagels. Sprinkle everything bagel seasoning generously over each bagel. Bake for 15–18 minutes, or until the bagels are golden brown on top. Remove from the oven and let them cool completely on a wire rack before slicing.
Assemble The Bagel
Heat a nonstick pan over medium-low heat and lightly grease with oil or cooking spray. Crack an egg into the pan and cook it to your liking. Slice a cooled bagel in half using a serrated knife and spread Kewpie mayo on one half of the bagel and strawberry jam on the other. Layer the sandwich with tomatos, cucumbers, onions, and jalapeño slice, then place the cooked egg on top.
