Honey and Maple Baked Carrots

These Honey and Maple Baked Carrots are ready in under an hour and are the perfect side dish for weeknight dinners or the holidays! This easy side dish features carrots coated in honey, maple syrup, butter and spices.

  • This recipe uses only one bowl and a sheet pan, making it an easy side dish that requires minimal cleanup. Line a tray with foil paper or parchment to make it even easier for cleaning and you can also throw your protein of choice and potatoes onto the same sheet pan to make a complete meal.

  • This side dish is super versatile, making it perfect for a casual weeknight dinner or a special holiday meal.

Ingredients

  • Carrots – For this recipe, whole, peeled carrots are recommended.
  • Butter– I used unsalted butter, but salted butter or margarine can be used.
  • Oil– Avocado oil is recommended due to its high heat point but extra virgin olive oil will work just fine.
  • Honey– Use your favourite type of honey. Hot honey would be a great addition!
  • Maple– Use high-quality maple syrup for that extra sweet flavour.
  • Dijon mustard– Dijon mustard adds an amazing tang and slight spice.
  • Parsley– Dried or fresh parsley can be used (Note: fresh parsley will wilt and may burn in the oven).
  • Sea Salt– We used sea salt in this recipe. You can use table salt or flaky salt as well.
  • Chilli flakes– This recipe uses chilli flakes. Sambal olek or hot sauce can be used instead.

INSTRUCTIONS

Step 1: Preheat oven to 400 degrees Fahrenheit. After washing and peeling the carrots, slice them lengthwise. Place the carrots on a lined baking sheet.

Step 2: Melt the butter in a small, microwave-safe bowl for 20 to 30 seconds depending on your microwave. Combine the butter with oil, maple syrup, honey, dijon mustard, parsley, salt, and chilli flakes in the same bowl. Whisk the ingredients together until combined.

Step 3: Pour the mixture over the carrots evenly and toss the carrots together until each carrot is well coated. Line the carrots evenly on the baking sheet.

Step 4: Bake the carrots for about 20 to 30 min or until fork tender. Once done, garnish with parsley, then drizzle some honey over the carrots.

What type of carrots should I use?

I like using a pack of peeled carrots from Costco, but whole carrots, baby carrots, or diced carrots will work. However, if you choose to use baby carrots, the temperature times may vary.

What is the best way to reheat the carrots?

To preserve the crunch, reheat the carrots in an air fryer at 350 degrees Fahrenheit for approximately 3 to 5 minutes and then drizzle some honey on top to retain the sweetness. Alternatively, you can microwave the carrots in a covered container or plate.

Can I substitute the honey for a different sweetener?

Absolutely! For a vegan-friendly recipe just substitute the recipe with all maple syrup. A tablespoon of brown sugar would also be amazing in this recipe.

Ingredients
  

  • 1.5 pound carrots
  • 2 tablespoon butter
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon maple syrup
  • 2 tablespoon honey
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon dried parsley flakes
  • 1/4 teaspoon sea salt
  • 1/2 teaspoon chilli flakes

Instructions
 

  • Preheat oven to 400 degrees Fahrenheit. Wash and peel carrots.

  • Line a baking sheet with parchment paper. Slice the carrots vertically in half and place them on the baking sheet.
  • In a microwave-safe bowl, melt the butter.
    2 tablespoon butter
  • To the same bowl, add the oil, maple syrup, honey, dijon mustard, dried parsley flakes, salt, and chili flakes. Whisk together until combined.

  • Pour the mixture over the carrots and toss them together until all the carrots are coated.
  • Spread the carrots out evenly on the baking sheet. Place the carrots into the oven for approximately 20-30 minutes or until the carrots are tender and browned. (Note: Timing may vary due to carrot size and oven temperatures)
  • Once cooked remove from the oven immediately and enjoy!

Notes

  • The baking time may increase if using larger sized carrots. 
  • Use a fork or knife to test if the carrots are tender and cooked. 
  • If the carrots are starting to brown in the oven and the carrots are raw, just cover the baking sheet with a foil paper to avoid burning the carrots. 
  • Store the carrots in an airtight container and refrigerate. The carrots will last between 2 to 4 days.
