Baked jalapeño Spinach Dip

This Baked Jalapeño Spinach Dip is a unique twist on the classic hot spinach dip, featuring the bold flavours of fresh jalapeños, chilli flakes, and Cajun seasoning to kick it up a notch.

Ingredients
  

  • 1 to 2 tablespoons extra virgin olive oil
  • 1 medium white onion, diced
  • 5 garlic cloves, finely chopped
  • 2 jalapeños, (dice one jalapeno and thinly slice the other)
  • 300 grams package frozen, chopped spinach
  • 250 g package cream cheese, softened to room temperature
  • 1 cup full-fat sour cream
  • 1 cup full-fat mayonnaise
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley
  • 1/2 tablespoon cajun seasoning
  • 1 teaspoon chilli flakes
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon kosher salt
  • 1 1/2 cups shredded cheese, mozzarella or cheddar + extra for topping

Instructions
 

  • Microwave frozen spinach until fully thawed. Once fully cool, squeeze out excess water and set aside.

  • Add oil to a pan and sauté the minced garlic, onions, and jalapeños over medium heat until the onions are slightly charred.

  • Preheat the oven to 350℉.
  • In a large bowl, combine the softened cream cheese, sour cream, mayonnaise, spinach, sautéed onion, garlic, jalapeño mixture, all the seasonings and shredded cheese. Stir until well combined.
    250 g package cream cheese,, 1 cup full-fat sour cream, 1 cup full-fat mayonnaise, 1 teaspoon garlic powder, 1 teaspoon dried parsley, 1/2 tablespoon cajun seasoning, 1 teaspoon chilli flakes, 1/4 teaspoon black pepper, 1/4 teaspoon kosher salt, 1 1/2 cups shredded cheese,
  • Pour the mixture into a cast iron skillet, spread it evenly, and top with shredded cheese and sliced jalapeños. Bake for 20 minutes and then broil for 2 to 3 minutes or until the cheese is brown. Serve warm with fresh baguette and pita chips.

Notes

  • For less spice, deseed the jalapeño before cooking.
