A warm slice of bread slathered in garlic butter and topped with freshly grated cheese is my favourite side dish to serve alongside a bowl of pasta or to dip in a bowl of marinara.
Preheat the oven to 400 Fahrenheit (200 °C). Slice the top part of the garlic off and place it on foil paper. Drizzle oil over the garlic bulbs, seal the foil tightly and place it in the oven for approximately 35 to 45 minutes or until the garlic has softened.
2 garlic heads, 1 teaspoon extra virgin olive oil
Allow the garlic to cool and then squeeze out the garlic into a bowl and dispose of the skin. To the same bowl add butter, garlic powder, salt, and dried parsley. Stir until combined.
Preheat the oven to 380 Fahrenheit (190°C) and line a baking tray with parchment. Slice the loaf in half and place onto the parchment. Spread the garlic mixture evenly over the loaves and top with shredded cheese. Bake for 6 to 8 minutes or until it reaches your desired level of crispness. Optional- Broil for 1 to 2 minutes on high. Top with freshly chopped parsley and enjoy!
1 loaf french bread, 1 cup shredded mozzarella cheese, 1 cup shredded cheddar cheese
