Servings 8 large pieces

Ingredients

  • 1 tablespoon Unsalted butter or margarine
  • 250 grams Mini marshmallows
  • pinch of salt
  • 1/2 teaspoon Vanilla extract or vanilla bean paste
  • 135 grams (5 cups) Rice krispies

Instructions

  • Line an 8x8-inch baking tray with parchment paper and lightly grease the parchment.
  • In a large pot over medium-high heat, melt the butter. Once melted, reduce the heat to medium-low and add the marshmallows. Stir continuously until the marshmallows are fully melted and have a thick, glue-like texture.
1 tablespoon Unsalted butter or margarine, 250 grams Mini marshmallows
  • Remove the pot from the heat. Add vanilla extract and a pinch of salt, then stir to combine. Add the Rice Krispies and mix until they’re fully coated in the marshmallow fluff. (Optional: stir in a handful of extra mini marshmallows at the end for gooey pockets in your squares!)
1/2 teaspoon Vanilla extract or vanilla bean paste, 135 grams (5 cups) Rice krispies, pinch of salt
  • Pour the mixture into the tray and press it down into an even layer using a spatula, or wet your hands with water and gently press. Let it set for about an hour, then slice into squares with a sharp knife.
