Ingredients
  

  • 870 grams (3 medium) Sweet potatoes
  • 1 teaspoon Salt
  • 1 teaspoon Garlic powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon Dried parsley
  • 1/2 teaspoon Cumin powder
  • 1/2 teaspoon Paprika
  • 1/4 teaspoon White pepper
  • 2 tablespoons Olive oil
  • 1 tablespoon Lemon juice
  • 1 tablespoon Dijon mustard

Instructions
 

  • Preheat your oven to 450°F.
  • In a small bowl, whisk together the salt, garlic powder, Italian seasoning, dried parsley, cumin, paprika, and white pepper. Set aside.

  • Peel the sweet potatoes and cut them into 1-inch cubes. Add them to a large mixing bowl.

  • Add olive oil, lemon juice, Dijon mustard, and the spice mix to the sweet potatoes. Toss everything together until the sweet potatoes are evenly coated.
