Ingredients:

  • Butter: I use unsalted butter for this recipe, but you can use salted butter, vegan butter, or margarine. All three substitutions work well!
  • Marshmallows: Smaller marshmallows are easier to melt and create a better texture, but large marshmallows will work just fine too.
  • Vanilla: Use vanilla extract or vanilla bean paste for extra flavor.
  • Rice Krispies: You’ll need a box of Rice Krispies, and feel free to use the holiday editions for fun pops of color!

Step By Step Instructions

Step 1: Line an 8×8-inch baking tray with parchment paper and lightly grease the parchment.

Step 2: In a large pot over medium-high heat, melt the butter. Once melted, reduce the heat to medium-low and add the marshmallows. Stir continuously until the marshmallows are fully melted and have a thick, glue-like texture.

Step 3: Remove the pot from the heat. Add vanilla extract and a pinch of salt, then stir to combine. Add the Rice Krispies and mix until they’re fully coated in the marshmallow fluff. (Optional: stir in a handful of extra mini marshmallows at the end for gooey pockets in your squares!)

Step 4: Pour the mixture into the tray and press it down into an even layer using a spatula—or wet your hands with water and gently press. Let it set for about an hour, then slice into squares with a sharp knife.

Easy Rice Krispie Treat Recipe FAQ

Should I use mini or large marshmallows for Rice Krispie squares?

I prefer mini marshmallows because they melt faster and more evenly, making it easier to mix everything together. Large marshmallows work too, but it helps to chop them into smaller pieces before melting to make the process faster.

Why are my Rice Krispie squares so sticky?

Sticky squares usually mean there’s too much marshmallow and not enough cereal. To fix this, add a little more Rice Krispies, one handful at a time, until the mixture is easier to handle. Make sure to press the mixture firmly into the pan and let it cool completely before cutting.

How to prevent Rice Krispie squares from getting hard

Melt the butter and marshmallows over low heat. Using high heat can overcook the mixture and lead to hard, crunchy squares. After making them, store the squares in an airtight container at room temperature. Avoid putting them in the fridge, as that can make them too firm.
